Kara Kulambu is a spicy South Indian dish that is typically made with tamarind pulp, spices, and vegetables. Here's a recipe to make Kara Kulambu:
Ingredients:
1 small lemon-sized tamarind
1 onion, chopped
2 tomatoes, chopped
2-3 green chillies, slit
2 tbsp Coconut oil
1 tsp mustard seeds
1 tsp cumin seeds
1/4 tsp fenugreek seeds
1/4 tsp asafoetida
1 tsp turmeric powder
2 tsp red chilli powder
2 tbsp sambar powder
1/2 cup chopped vegetables (such as brinjal, drumstick, carrot, beans, potato)
Salt to taste
Water as needed
Coriander leaves for garnish
Instructions:
Soak the tamarind in warm water for 10-15 minutes. Extract the juice and discard the pulp and seeds.
Heat coconut oil in a pan and add mustard seeds, cumin seeds, fenugreek seeds, and asafoetida. Fry for a few seconds.
Add the chopped onion and green chillies. Saute until the onions turn translucent.
Add the chopped tomatoes and fry until they turn mushy.
Add the turmeric powder, red chilli powder, sambar powder, and salt. Mix well. And
Add the chopped vegetables and mix again.
Pour the tamarind juice into the pan and add enough water to get the desired consistency. Mix everything well.
Cover the pan and let the kulambu simmer for about 10-15 minutes, or until the vegetables are cooked.
Garnish with coriander leaves and serve hot with rice.
Note: You can adjust the quantity of red chilli powder and sambar powder as per your spice level preference. Also, you can use any vegetables of your choice in the kulambu.
