How to make taste sambar
Ingredients:
1 cup split pigeon peas (toor dal)
1 onion, chopped
2 tomatoes, chopped
2-3 green chillies, slit
1 carrot, chopped
1 drumstick, chopped (optional)
1/2 cup chopped vegetables of your choice (okra, eggplant, pumpkin, etc.)
1/4 cup tamarind pulp
2 tsp sambar powder
1 tsp turmeric powder
1 tsp mustard seeds
1 tsp cumin seeds
2-3 dried red chillies
1 sprig curry leaves
2 tbsp oil
Salt to taste
For the masala:
2 tbsp grated coconut
2 tsp coriander seeds
1 tsp cumin seeds
1/2 tsp fenugreek seeds
5-6 black pepper corns
2-3 dried red chillies
1 tsp oil
Method:
1. Wash and soak the pigeon peas for 30 minutes.
2. Pressure cook the soaked pigeon peas with 3 cups of water, turmeric powder, and chopped onion till the dal is cooked and soft.
3. In the meantime, prepare the masala by frying all the ingredients in a little oil in a non-stick pan until the coconut turns golden brown.
4. Grind the masala to a fine paste using a blender.
5. Add the chopped vegetables to the cooked dal and cover and cook until the vegetables are tender.
6. Add tamarind pulp and sambar powder to the dal and mix well.
7. Add the ground masala paste and salt to taste and mix well.
8. Heat oil in a separate pan and add mustard seeds, cumin seeds, dried red chillies, and curry leaves.
9. Fry for a few seconds and add it to the sambar.
10. Let the sambar boil for a few minutes on medium heat.
11. Garnish with coriander leaves and serve with rice or idli.
