Biryani is a popular South Asian rice dish that is made by layering rice and meat (or vegetables) and then cooking it with a variety of spices. Here is a basic recipe for chicken biryani that you can try at home:
Ingredients:
For Rice:
- 2 cups basmati rice
- 4 cups water
- 1 teaspoon salt
- 1 bay leaf
- 2-3 green cardamom pods
- 1 cinnamon stick
- 2-3 cloves
- 1 tablespoon ghee (clarified butter)
For Chicken:
- 1 pound chicken, cut into pieces
- 1/2 cup yogurt
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons vegetable oil
For Layering:
- 1 onion, thinly sliced
- 1/4 cup chopped fresh mint leaves
- 1/4 cup chopped fresh cilantro leaves
- A pinch of saffron strands
- 2 tablespoons warm milk
- 2 tablespoons ghee (clarified butter)
Instructions:
Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
In a large pot, bring 4 cups of water to a boil. Add salt, bay leaf, cardamom pods, cinnamon stick, cloves, and ghee.
Drain the soaked rice and add it to the boiling water. Reduce the heat to low and cook the rice until it is tender and fluffy, about 15-20 minutes.
In a large bowl, mix together the yogurt, ginger paste, garlic paste, cumin powder, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Add the chicken pieces and mix well.
In a large skillet, heat the vegetable oil over medium-high heat. Add the marinated chicken and cook until browned on all sides, about 5-7 minutes.
In the same skillet, add the sliced onions and sauté until golden brown, about 5-7 minutes.
Preheat the oven to 350°F (180°C).
In a small bowl, mix together the saffron strands and warm milk.
In a large oven-proof dish, layer the cooked rice, chicken, and sautéed onions. Repeat the layers until all the ingredients are used up.
Sprinkle the chopped mint and cilantro over the top of the last layer.
Pour the saffron-milk mixture over the top of the biryani.
Drizzle the ghee over the top.
Cover the dish with foil and bake in the preheated oven for 20-25 minutes.
Serve hot with raita (a yogurt-based side dish) and/or salad. Enjoy your delicious biryani
